In the historic heart of the city, at the Manifattura dei Marinati, the ancient tradition of fish pickling is kept alive as it has been for centuries. After being cooked in the large traditional fireplaces, the fish is preserved following the ancient recipe, a process that enhances its unmistakable flavour and makes it a true local excellence.
