Among the most celebrated PGI-certified products are the Coppia Ferrarese IGP, an iconic twisted bread with a distinctive shape; the Ferrarese butternut squash, the star ingredient of the local cappellacci pasta; Po Delta Rice IGP; IGP-certified pears and peaches; and the emblematic cured meats of the area, above all the Salama da sugo, the undisputed queen of Ferrara's culinary tradition.
The lagoons of Goro and Comacchio are also the natural habitat of the clam, a central ingredient in many local recipes and the cornerstone of a gastronomic tradition that finds its finest expression in the restaurants of the Po Delta Park.
