The green Asparagus from Altedo - IGP
In the fertile land in the mouth of the Po River, naturally sandy and rich in water, it is concentrated about 40% of the Emilia-Romagna asparagus production. The waterside municipalities in the province of Ferrara, from Mesola to Bondeno, are included in the production of the green Asparagus from Altedo. It is now much sought at a national and European level for its refined and pleasantly herbaceous flavour. With regard to the nutritional characteristics, the asparagus is richer in fibre than other vegetables and provides limited amounts of fats, proteins and sugars, while it is rich in mineral elements essential for humans, particularly calcium, phosphorus, magnesium, and potassium. This vegetable also has a high content of antioxidants, vitamin A, B6 and C and is an excellent source of folic acid.
